Background and Research Interests
De'Anthony graduated from West Virginia University with a Bachelor of Science in Human Nutrition & Foods with a minor in Food Science & Technology. During that time, De'Anthony was able to work as an undergraduate researcher studying the volatile organic compounds of foodborne pathogens on food products. Currently, De'Anthony's research broadly focuses on fresh produce safety. Specifically, studying the use of ozone nanobubbles to inactivate pathogens on leafy greens, developing models to predict free chlorine levels in produce wash water during washing, and environmental monitoring of Listeria monocytogenes in controlled atmosphere apple storage facilities.
