Application of 1-MCP to Your Fruit: Options for Treatment and Impact on Aroma

Sources of 1-MCP for fruit and vegetable treatments are noted and factors that affect the release kinetics of 1-MCP are discussed. Low temperature water slows the release of 1-MCP from a cyclodextrin encapsulation matrix. Low doses of 1-MCP can be effective if the doses are applied for extended time periods.
