Recipe: Cowboy Caviar
Serve this bean salad as a side or with chips.
Ingredients
- 1/2 cup oil
- 1/2 cup sugar
- 1/2 cup vinegar
- 16 ounces Michigan pinto beans
- 16 ounces Michigan black eye peas
- 16 ounces Michigan black beans
- 1 can green chillis
- 1 diced yellow pepper
- 1 diced orange pepper
- 1 diced red pepper
- 1 diced red onion
Instructions
Boil sugar and vinegar for one minute, let cool and pour over beans and vegetables.
Mix to combine, and serve.
