The Very Versatile Green Bean!
Green beans are versatile and nutritious.
According to Michigan State University Extension, green beans have a unique color, texture and taste. Green produce contains fiber, calcium and folate. Folate is essential in a healthy pregnancy by helping to reduce birth defects. They also help to maintain vision health, strong bones, teeth and lowers the risk of some cancers.
Green Beans are grown in a variety of climates and grow best after all dangers of an early frost have been eliminated. This vegetable is easy to grow and doesn’t require much space to grow. Green beans can be trained to grow on a pole or as a bush. There are several varieties of pole green beans and a couple types of bush green beans.
The U.S. Department of Agriculture classify’s green beans with other vegetables such as onions, lettuce, celery and cabbage because their nutrient content is similar.
Green beans are a very versatile and come fresh, frozen or canned, and can be served in many ways. They can be eaten raw, steamed, pan seared, boiled, stir fried or baked in the oven to a crispy perfection. Oven Roasted Green Beans
Ingredients
1 1/2 pounds green beans
2 tablespoons extra-virgin olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Directions
- Preheat oven to 425 F
- Trim ends off green beans and add to a large bowl.
- Toss all ingredients together
- Spread out evenly on a parchment lined baking sheet.
- Roast for 12-15 minutes stirring halfway through
These can also be sprinkled with garlic powder, Cajun seasonings or parmesean cheese before serving.
