Regulatory and Food Safety Overview

Course Overview

This course is designed to strengthen participants' understanding of key regulations, best practices, and preventive controls essential for producing safe food, maintaining compliance, and improving operational standards in food manufacturing establishments subject to the Food Safety Modernization Act (FSMA), as well as food service environments.

Topics include foundational and advanced concepts such as Hazard Analysis and Critical Control Point (HACCP) principles, low-acid and acidified foods regulations, FSMA regulations, private standards, Good Manufacturing Practices (GMPs), preventive controls, heat treatment systems, food defense strategies, sanitary transportation protocols, recall procedures, and identity preservation.

Please note: While all food sectors may find value in this course, it is not intended for individuals subject to the United States Department of Agriculture Food Safety and Inspection Service (USDA FSIS), those involved in farming, growing, or packing raw agricultural commodities, or those participating in aquaculture activities—such as operating fishing vessels or conducting the initial land-based processing of food obtained from fishing vessels

What URL do I go to for logging into the course?

Go to: https://d2l.msu.edu/. You will see the Michigan State University at the top of the page. Login with the email address and password you set during the registration process.

A “not authenticated” message is typically an issue with a password not being entered correctly.
